Here’s the recipe for this unique and flavorful dish.

Soupe à l’Ail Rose de Lautrec – Pink Garlic Soup

Ingredients (Serves 4):

  • 2 litres of water
  • 10 cloves of pink garlic (approximately one whole head of Lautrec garlic)
  • 150g vermicelli
  • Salt and pepper

For the mayonnaise:

  • 1 tsp Dijon mustard
  • 1 egg yolk
  • 100ml mild olive oil or other vegetable oil
  • Salt and pepper

Method:

  1. In a large saucepan, bring the water to a boil, then add the crushed pink garlic cloves and seasoning. Stir well and cook for 3 minutes.
  2. Add the vermicelli and cook for another 3 minutes.
  3. Meanwhile, prepare the mayonnaise by whisking together the egg yolk, mustard, oil, and seasoning in a bowl. Gradually whisk in a ladle-ful of warm garlic broth to thin the mayonnaise, then gently stir this mixture into the soup.
  4. Reheat the soup gently, without letting it boil.
